  • 3 large garlic cloves, minced

  • 1 tablespoon olive oil
  • ½ cup vegetable broth or water
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon fresh herbs (thyme or rosemary, optional)

Instructions

  1. If using canned butter beans, drain and rinse under cold water. If using dried beans, soak overnight and cook until tender (about 1 to 1.5 hours). Set aside.
  2. Heat olive oil in a medium sauté pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add unsalted butter and let it melt slowly into the garlic oil, forming the sauce base.
  4. Add the butter beans to the pan, stirring gently to coat with butter and garlic. Pour in vegetable broth or water and bring to a low simmer.
  5. Season with salt, pepper, and optional fresh herbs. Let simmer gently for 5 to 7 minutes until the sauce thickens slightly.
  6. Add fresh spinach in batches, stirring until each batch wilts before adding more.
  7. Remove from heat and stir in freshly grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
  8. Serve warm, optionally with crusty bread or a fresh salad.

Notes

Use fresh Parmesan for best flavor and texture. Add spinach in batches to keep it vibrant. For vegan version, substitute butter with vegan butter and Parmesan with nutritional yeast. If sauce is too thick, add more broth or water; if too thin, simmer longer. Avoid over-stirring to keep beans intact.
