Instructions

  1. Trim any excess fat from chicken breasts and cut into roughly 1.5-inch nugget-sized pieces, keeping them uniform for even cooking.
  2. Place chicken pieces in a bowl with ½ cup buttermilk. Stir gently to coat and let sit for at least 15 minutes (30 minutes to 1 hour preferred).
  3. In another bowl, combine flour, panko breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk to distribute evenly.
  4. Using tongs or a fork, lift chicken pieces from buttermilk, letting excess drip off, then dredge in the dry mixture, pressing lightly to adhere coating. Set nuggets on a plate.
  5. Preheat air fryer to 400°F (200°C) for 3-5 minutes.
