  • 1/2 cup grated parmesan cheese (freshly grated preferred)
  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Cooking spray (for air fryer basket)
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Wash and dry 2 medium zucchinis. Slice into 1/4-inch rounds. Pat slices dry with a paper towel if extra watery.
  2. Place zucchini rounds in a large mixing bowl. Drizzle with olive oil and toss to coat.
  3. In a separate bowl, combine grated parmesan, garlic powder, onion powder, smoked paprika (if using), salt, and black pepper.
  4. Add parmesan mixture to zucchini and gently toss until each round is coated, pressing cheese onto rounds for best results.
  5. Preheat air fryer to 400°F for 3 minutes. Lightly spray the basket with cooking spray.
  6. Arrange zucchini rounds in a single layer in the air fryer basket, without overlapping. Work in batches if needed.
  7. Air fry at 400°F for 8–10 minutes, flipping halfway through, until golden and crisp at the edges.
  8. While zucchini cooks, mix sour cream (or Greek yogurt), mayonnaise, dried dill, dried parsley, garlic powder, onion powder, salt, black pepper, and lemon juice in a small bowl until smooth. Adjust seasoning to taste.
  9. Transfer crispy zucchini rounds to a serving plate and serve immediately with ranch dip on the side.

Notes

For extra crispiness, avoid crowding the air fryer basket and pat zucchini slices dry before coating. If your air fryer runs hot, check at the 7-minute mark. Let rounds cool on a wire rack for 2 minutes for even more crunch. Store leftovers in the fridge and reheat in the air fryer for best texture.
