Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. In a shallow bowl, combine panko breadcrumbs, grated Parmesan, chopped parsley, thyme, dried oregano, and garlic powder. Stir until evenly mixed.
  3. Using a basting brush or spoon, spread a thin, even layer of Dijon mustard over both sides of each pork chop.
  4. Press each pork chop into the herb mixture, coating both sides firmly.
  5. Preheat the air fryer to 400°F (200°C).
  6. Place the pork chops in a single layer in the air fryer basket and lightly spray the top with olive oil spray.
  7. Air fry at 400°F (200°C) for 6-7 minutes on one side, then flip carefully and cook for another 6-8 minutes until the internal temperature reaches 145°F (63°C) and the crust is golden and crispy.
  8. Let the pork chops rest for 5 minutes before serving.
