A quick and easy recipe for crispy, flavorful sweet potato fries made in the air fryer with simple ingredients and minimal oil. Perfect as a healthy snack or side dish.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled or unpeeled
  • 12 tablespoons olive oil (extra virgin or avocado oil)
  • 1 teaspoon salt (sea salt or kosher salt preferred)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (smoked paprika optional)
  • Optional: pinch of cayenne pepper
  • Optional: dried herbs like rosemary or thyme
  • Optional: grated Parmesan cheese for sprinkling after cooking

Instructions

  1. Peel the sweet potatoes if desired, or leave the skin on. Slice into even sticks about ¼ inch thick.
  2. Place the sliced sweet potatoes in a large bowl of cold water and soak for 15-20 minutes to remove excess starch. Drain and pat dry thoroughly with a clean kitchen towel.
  3. Return the dried fries to the bowl. Drizzle with 1-2 tablespoons olive oil and sprinkle salt, pepper, garlic powder, and paprika. Toss to coat evenly.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Arrange fries in a single layer in the air fryer basket without overcrowding. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 15-18 minutes, shaking or flipping the fries halfway through cooking (around 8 minutes) to ensure even browning.
  7. Check for doneness; fries should be crisp on the outside and tender inside. Add 2-3 more minutes if extra crispiness is desired, watching closely to avoid burning.
  8. Serve immediately, optionally sprinkling with extra salt or Parmesan cheese.

Notes

Soaking the fries in cold water removes excess starch and is key to achieving crispiness. Pat fries completely dry before cooking. Avoid overcrowding the air fryer basket to prevent steaming. Shake or flip fries halfway through cooking for even browning. Fries lose crispiness quickly, so serve immediately. Store sliced and soaked fries in water in the fridge for up to 24 hours if prepping ahead.
