  • 6 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about 1/2 teaspoon)
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine softened butter, minced garlic, grated parmesan, lemon zest, lemon juice, parsley, thyme, rosemary, salt, and pepper. Mix until well combined and creamy.
  3. Pat the chicken thighs dry with paper towels.
  4. Lightly coat the chicken thighs with olive oil.
  5. Season both sides of the chicken thighs with salt and pepper.
  6. Spread a generous tablespoon of the lemon herb butter under the skin of each thigh.
  7. Place the chicken thighs skin side up on a baking sheet or ovenproof skillet, leaving space between each piece.
  8. Bake for 30 minutes at 375°F (190°C).
  9. Increase the oven temperature to 425°F (220°C) and bake for an additional 10-15 minutes until the skin is crispy and golden.
  10. Remove from the oven and let rest for 5 minutes.
  11. Serve with an extra drizzle of melted lemon herb butter if desired.

Pat chicken skin dry to ensure crispiness. Spread butter under the skin for moist, flavorful meat. Bake low then high heat to cook through and crisp skin. Use a cast-iron skillet for better heat retention and crispiness. Broil 2-3 minutes at the end for extra crisp skin but watch carefully to avoid burning. Fresh parmesan cheese is preferred over pre-grated for better melting and browning.
