  • 1 teaspoon garlic powder

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying (about 2 cups / 480ml)
  • ½ cup (120g) mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey or sugar
  • Pinch of garlic powder
  • 8 small corn tortillas
  • 1 cup shredded green cabbage
  • Fresh cilantro leaves (optional)
  • Lime wedges for serving

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a mixing bowl, combine flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  3. Toss the shrimp in the flour mixture until well coated.
  4. In a separate bowl, whisk together mayonnaise, Sriracha, lime juice, honey, and a pinch of garlic powder. Refrigerate until ready to use.
  5. Pour about 2 cups (480ml) of vegetable oil into a skillet or frying pan to a depth of about 2 inches. Heat over medium-high until oil reaches 350°F (175°C).
  6. Fry shrimp in batches for 2-3 minutes per batch until golden and crispy, turning once if needed. Remove with a slotted spoon and drain on paper towels.
  7. Warm the corn tortillas in a dry skillet or microwave wrapped in a damp towel for 2-3 minutes.
  8. Assemble tacos by placing shredded cabbage on each tortilla, adding 3-4 shrimp, drizzling with spicy mayo, and topping with cilantro and a squeeze of lime.

Notes

Pat shrimp dry before coating to ensure crispiness. Fry in small batches to maintain oil temperature. Spicy mayo can be made ahead and refrigerated for up to 3 days. Reheat shrimp in a hot skillet to restore crispiness. For gluten-free, substitute all-purpose flour with almond or gluten-free flour. Baking option available but less crispy.
