Crispy Blackstone Bacon Smash Burger with Fried Egg

A quick and easy smash burger recipe cooked on a Blackstone griddle featuring crispy bacon, caramelized onions, melted American cheese, and a fried egg on a toasted potato bun. Perfect for busy weeknights or casual gatherings.

  • 1 lb ground beef (80/20 blend)
  • 4 thick-cut bacon strips
  • 4 large eggs
  • 1 yellow onion, thinly sliced
  • 4 slices American cheese
  • 4 soft potato buns
  • Butter or oil for toasting buns and frying eggs
  • Salt and freshly ground black pepper to taste
  • Optional toppings: pickles, lettuce, tomato slices, burger sauce

Instructions

  1. Preheat the Blackstone griddle to medium-high heat, about 375°F (190°C). If using a skillet, preheat over medium-high heat until shimmering (about 5 minutes).
  2. Cook the thick-cut bacon strips on the griddle for 3-5 minutes per side until crispy but not burnt. Remove and drain on paper towels. Keep the rendered bacon fat on the griddle.
  3. Add thinly sliced yellow onions to the hot griddle. Stir occasionally and cook for 8-10 minutes until soft and golden. Set aside.
  4. Divide ground beef into 4 equal portions (about 4 oz each). Roll loosely into balls without compacting. Place each ball on the griddle and immediately press down firmly with a spatula or burger press until about 1/4-inch thick. Season with salt and pepper.
  5. Cook patties undisturbed for 2-3 minutes until edges are crispy and browned. Flip carefully and add a slice of American cheese. Cook for another 1-2 minutes until cheese melts.
  6. While burgers cook, heat a non-stick pan with butter over medium heat. Crack in eggs and cook sunny-side up or over easy, seasoning with a pinch of salt.
  7. Spread butter on cut sides of potato buns and toast them on the griddle or skillet until golden, about 1-2 minutes.
  8. Assemble the burger by layering bottom bun, caramelized onions, bacon strips, cheese-topped patty, fried egg, and any optional toppings. Finish with the top bun.
  9. Serve immediately while hot.

Notes

Use an 80/20 ground beef blend for juicy patties with crispy edges. Don’t smash patties too thin; about 1/4-inch thickness is ideal. Fry eggs sunny-side up or over easy for runny yolks. Toast buns last to keep them crispy. You can substitute gluten-free buns or lettuce wraps for a gluten-free option, and vegan cheese or no cheese for dairy-free.
