  • 1/2 cup (115g) unsalted butter, browned
  • 3 medium ripe bananas (about 1 1/2 cups mashed)
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) chocolate chunks, preferably bittersweet or semisweet

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper, leaving edges overhanging for easy removal.
  2. In a medium saucepan, melt the butter over medium heat. Stir occasionally as it foams and turns golden brown with a nutty aroma. Remove immediately from heat and pour into a heatproof bowl to cool slightly.
  3. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth but still slightly chunky. Stir in granulated sugar, brown sugar, eggs, and vanilla extract until combined and slightly fluffy.
  4. Slowly add the cooled brown butter to the banana mixture, stirring continuously to avoid cooking the eggs.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the chocolate chunks carefully to distribute evenly without breaking them.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55 to 65 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out with a few moist crumbs but no wet batter. The top should be deep golden brown with crispy edges.
  9. Let the bread cool in the pan for 10-15 minutes. Then lift out using parchment edges or invert if greased. Place on a wire rack to cool completely before slicing.

Notes

Watch the butter closely when browning to avoid burning. Use ripe bananas with brown spots but not blackened for best sweetness. If edges brown too fast, tent with foil halfway through baking. Let bread cool completely before slicing for cleaner slices.
