  • 2 garlic cloves, smashed

  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels, especially the skin side. Season generously with salt and pepper on both sides. Let rest at room temperature for about 10 minutes.
  2. Heat a cast iron skillet over medium heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Place chicken breasts skin-side down in the hot pan. Press down lightly with tongs to ensure full contact. Cook for 6-8 minutes without moving until edges are golden and skin releases easily.
  4. Flip the chicken breasts and reduce heat to medium-low.
  5. In a separate small pan, melt butter over medium heat. After foaming, let it turn golden brown with a nutty aroma. Add smashed garlic and sage leaves, crisp for about 1 minute, then remove garlic.
  6. Pour the brown butter, sage, and garlic mixture over the chicken in the skillet. Tilt the pan and baste the chicken continuously for 5-7 minutes or until internal temperature reaches 160°F (71°C).
  7. Stir in drained capers and cook for an additional minute to warm through.
  8. Remove chicken from pan and let rest for 5 minutes before slicing.
  9. Just before serving, drizzle fresh lemon juice over the chicken and capers.

Pat chicken skin dry for best crispiness. Use moderate heat to avoid burning butter. Baste chicken continuously with brown butter for moist, flavorful meat.
