Instructions

  1. Pat dry 2 pounds (900g) of chicken wings thoroughly with paper towels to remove excess moisture.
  2. In a large bowl, toss wings with 1 tablespoon baking powder, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, and ½ teaspoon onion powder until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  4. Place wings in a single layer in the air fryer basket without overcrowding; cook in batches if necessary.
  5. Air fry wings at 400°F (200°C) for 20 minutes, flipping halfway through at 10 minutes, until golden and crispy and internal temperature reaches 165°F (74°C).
  6. While wings cook, melt 3 tablespoons butter in a small saucepan over low heat. Stir in ½ cup hot sauce and 1 tablespoon honey until combined. Add ½ teaspoon smoked paprika for smoky flavor if desired.
  7. Transfer cooked wings to a large bowl and toss with the buffalo sauce until evenly coated. Optionally brush on extra sauce for thicker coating.
  8. Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
