A quick and easy sweet snack made by roasting chickpeas in an air fryer until crispy, then coating them with cinnamon and sugar for a crunchy, cozy treat.

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1 tablespoon (15 ml) olive oil or avocado oil
  • 1 teaspoon (2 g) ground cinnamon
  • 2 tablespoons (25 g) granulated sugar or coconut sugar
  • A pinch (about 1/8 teaspoon) salt
  • 1/2 teaspoon (2.5 ml) vanilla extract (optional)

Instructions

  1. Drain and rinse chickpeas under cold water using a colander. Pat very dry with paper towels or a clean kitchen towel.
  2. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  3. In a mixing bowl, drizzle 1 tablespoon of oil over the chickpeas and stir gently to coat evenly.
  4. Spread chickpeas in a single layer inside the air fryer basket. Cook for 15-18 minutes, shaking the basket every 5 minutes to ensure even crisping. Watch closely after 12 minutes to avoid burning.
  5. While chickpeas roast, combine cinnamon, sugar, salt, and vanilla extract (if using) in a small bowl.
  6. Once chickpeas are crispy, transfer them back to the mixing bowl while still warm. Sprinkle the cinnamon sugar mixture over them and toss gently but thoroughly to coat evenly.
  7. Let the coated chickpeas cool for 5-10 minutes to allow the sugar to set and develop a satisfying crunch.
  8. Serve warm or at room temperature.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Shake the air fryer basket every 5 minutes for even cooking. Add cinnamon sugar coating only after chickpeas are hot and crispy to help it stick and caramelize. Store leftovers in an airtight container at room temperature for up to 3 days. Reheat in air fryer at 350°F for 2-3 minutes to restore crispiness. Avoid refrigeration to prevent sogginess.
