  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (Panko works best for extra crunch)
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for frying)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 12 ounces fettuccine or penne pasta (cooked and drained)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your baking dish lightly with oil or cooking spray.
  2. Season the chicken fillets with salt and pepper. Set up a breading station with three bowls—one for flour, one for beaten eggs, and one for a mixture of Parmesan, breadcrumbs, and garlic powder.
  3. Coat each chicken fillet in flour, dip it into the eggs, and then press it into the Parmesan-breadcrumb mixture. Ensure each piece is evenly coated.
  4. Heat olive oil in a large frying pan over medium heat. Fry the chicken fillets for 2-3 minutes per side until golden and crispy. Set aside on a plate lined with paper towels.
  5. Boil the pasta according to package instructions. Drain and set aside.
  6. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in the heavy cream and whisk until smooth. Stir in the Parmesan cheese, Italian seasoning, salt, and pepper. Cook for 3-4 minutes until the sauce thickens slightly.
  7. In the greased baking dish, mix the cooked pasta with the Alfredo sauce. Arrange the crispy chicken fillets on top and sprinkle with shredded mozzarella cheese.
  8. Place the dish in the oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool for 5 minutes. Garnish with chopped parsley and serve warm.
