  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 head romaine lettuce, chopped
  • ½ cup (4 fl oz) Caesar dressing (homemade or store-bought)
  • 4 large flour tortillas
  • 1 cup (about 3.5 oz) finely grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Optional: cracked black pepper and extra Parmesan for garnish

Instructions

  1. Prepare the Chicken Marinade: In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice. Coat the chicken breasts thoroughly with this mixture. Let it marinate for at least 15 minutes or up to 2 hours in the fridge.
  2. Make the Parmesan Crisps: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place heaping tablespoons of grated Parmesan spaced apart and flatten slightly. Bake for 5-7 minutes until golden and crisp. Remove and cool on a wire rack.
  3. Grill the Chicken: Heat grill pan or outdoor grill to medium-high. Cook marinated chicken breasts for 5-6 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice thinly.
  4. Prep the Salad: Chop romaine lettuce into bite-sized pieces and toss gently with Caesar dressing. Avoid overdressing.
  5. Assemble the Wraps: Warm tortillas briefly to make pliable. Lay out a tortilla, add dressed romaine, sliced grilled chicken, and a couple of Parmesan crisps. Fold sides and roll tightly. Repeat for each wrap.
  6. Serve: Slice wraps in half if desired. Optionally sprinkle with extra cracked black pepper or Parmesan. Serve immediately or wrap tightly for later.

Notes

Pat chicken dry before marinating for better crust. Watch Parmesan crisps closely to avoid burning. Don’t overdress lettuce to prevent sogginess. Rest chicken after grilling for juiciness. Assemble wraps close to serving time for best texture.
