This recipe transforms simple corn on the cob into a crispy, smoky, and flavorful treat with a buttery blend of Old Bay seasoning and Parmesan cheese, perfect for summer grilling.

Ingredients

Scale
  • 4 ears fresh corn on the cob, husked
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup finely grated Parmesan cheese
  • 2 teaspoons Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)
  • Salt, to taste

Instructions

  1. Shuck the corn completely, removing all husks and silk. Rinse under cold water and pat dry with a clean towel.
  2. In a mixing bowl, combine softened unsalted butter, grated Parmesan cheese, Old Bay seasoning, garlic powder, black pepper, lemon juice, and a pinch of salt. Mix until creamy and well blended.
  3. Preheat grill or grill pan to medium-high heat (about 400°F).
  4. Place corn directly on grill grates and cook for 10-12 minutes, turning every 2-3 minutes until all sides have a crispy, golden-brown char.
  5. Remove corn from grill and immediately brush or spoon the Old Bay Parmesan butter generously over each ear while still hot.
  6. Serve warm, optionally garnished with fresh parsley or a squeeze of lemon juice.

Notes

Patting the corn dry before grilling is essential for a crispy texture. Apply butter immediately after grilling to allow it to melt into the kernels. For extra crispness, re-grill buttered corn for 1-2 minutes per side. Use fresh Parmesan for best flavor. For dairy-free, substitute with plant-based butter and vegan Parmesan. Old Bay seasoning is typically gluten-free but check your brand.
