Juicy, tender chicken bites with a crispy coating, slow-cooked in a crockpot and finished with a sticky, sweet, and garlicky honey sauce. This easy family dinner is a crowd-pleaser and perfect for busy weeknights.

  • 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch chunks
  • 1 cup all-purpose flour (or gluten-free blend)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs (regular or gluten-free)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • Cooking spray or 2 tablespoons olive oil
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 4 garlic cloves, minced
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon fresh ginger, grated (or 1/2 teaspoon ground ginger)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1/2 teaspoon red pepper flakes (optional)
  • Sliced green onions (optional garnish)
  • Sesame seeds (optional garnish)
  • Fresh chopped parsley (optional garnish)

Instructions

  1. Pat chicken dry with paper towels and cut into 1-inch pieces. Season with salt, black pepper, and smoked paprika.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko. Dredge each chicken piece in flour, dip in egg, then coat in panko. Press gently to help crumbs stick.
  3. Lightly spray the crockpot insert with cooking spray or brush with olive oil. Arrange breaded chicken bites in a single layer (overlapping slightly is fine).
  4. In a bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, grated ginger, and red pepper flakes (if using). Pour sauce evenly over chicken.
  5. Cover and cook on LOW for 3 hours or HIGH for 1.5 hours, until chicken is fully cooked (internal temp 165°F).
  6. About 15 minutes before done, whisk cornstarch with water and stir into crockpot. Gently mix with chicken. Sauce should thicken as it finishes.
  7. For crispy bites, transfer chicken to a foil-lined baking sheet or wire rack. Broil on HIGH for 2-3 minutes, watching closely. Flip and broil another 1-2 minutes. Alternatively, crisp in a hot nonstick skillet with a splash of oil until golden.
  8. Return crisped chicken to slow cooker and toss gently to coat in sauce. Garnish with green onions, sesame seeds, or parsley if desired. Serve hot.

Notes

For extra crunch, double-dip chicken in egg and panko. Don’t overcrowd the crockpot for best results. Gluten-free and low-carb adaptations are easy. Leftovers reheat best under the broiler or in a skillet. Sauce can be adjusted for sweetness or spice.
