  • 1 cup Panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or set up a wire rack over the sheet.
  2. Prepare the breading stations: In three separate bowls, add the following: Bowl 1: Flour mixed with a pinch of salt and pepper. Bowl 2: Beaten eggs. Bowl 3: Panko breadcrumbs, grated Parmesan, garlic powder, paprika, and a little extra salt and pepper.
  3. Flatten the chicken breasts to an even thickness of about 1/2 inch using a meat mallet.
  4. Dredge each chicken breast first in flour, shaking off excess, then dip into the egg wash, and finally press firmly into the breadcrumb mixture to coat evenly.
  5. Place the coated chicken on a wire rack or directly on the parchment-lined baking sheet. Spray the tops lightly with olive oil.
  6. Bake the chicken at 400°F (200°C) for 20-25 minutes, flipping halfway through. Ensure the internal temperature reaches 165°F (74°C).
  7. Let the baked chicken rest for 5 minutes before serving.
