Golden, crunchy, and oozing with cheesy goodness—these crispy potato cheese sticks are the ultimate party snack, perfect for gatherings or potlucks.

Ingredients

  • 2 medium-sized russet potatoes, peeled and boiled
  • 1 cup mozzarella or cheddar cheese, cut into thin sticks
  • 2 large eggs, beaten
  • 1 cup plain breadcrumbs
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • Vegetable or canola oil for deep frying
  • Optional: 2 tbsp chopped parsley
  • Optional: 2 tbsp grated Parmesan

Instructions

  1. Peel and boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash them until smooth.
  2. Add salt, black pepper, garlic powder, paprika, chopped parsley (if using), and grated Parmesan to the potato mixture. Mix thoroughly.
  3. Take a small portion of the potato mixture and flatten it in your palm. Place a cheese stick in the center and wrap the potato mixture around it, forming a cylindrical stick. Repeat until all the mixture is used.
  4. Place the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
  5. Roll each stick in flour, dip in beaten eggs, and coat with breadcrumbs for a crispy exterior.
  6. Arrange the coated sticks on a baking tray and refrigerate for 30 minutes to help them hold their shape while frying.
  7. Heat the oil in a deep fryer or heavy-bottomed skillet to 350°F (175°C).
  8. Fry the potato cheese sticks in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per batch.
  9. Remove the sticks and place them on paper towels to drain excess oil. Serve hot and enjoy!
