  • 3 tablespoons (45 g) unsalted butter, softened
  • 6 cups (about 180 g) crispy rice cereal
  • 2 cups (about 60 g) Ruffles potato chips, lightly crushed
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13-inch (23×33 cm) baking dish or line it with parchment paper.
  2. In a medium saucepan over low heat, melt 3 tablespoons (45 g) of unsalted butter without browning it, about 2-3 minutes.
  3. Add 10 oz (280 g) mini marshmallows to the melted butter and stir constantly until completely melted and smooth, about 4-5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract, if using.
  5. Immediately add 6 cups (180 g) crispy rice cereal and 2 cups (60 g) lightly crushed Ruffles potato chips. Gently fold until evenly coated.
  6. Pour mixture into prepared pan and press evenly with a buttered spatula or wax paper, being careful not to press too hard, about 3-4 minutes.
  7. Let cool at room temperature for about 30 minutes or refrigerate for 15-20 minutes to set.
  8. Cut into squares or rectangles using a sharp knife warmed under hot water for cleaner cuts. Serve immediately or store as desired.

Notes

Use low heat to melt marshmallows to avoid scorching. Crush Ruffles lightly by hand to keep crunch. Press treats gently to maintain texture. Use a buttered spatula or wax paper to prevent sticking. Warm knife under hot water for clean cuts. Store in airtight container at room temperature up to 3 days or freeze up to 1 month.
