Crispy Sheet Pan Sausage and Peppers Recipe Easy 30-Minute Dinner

A quick and easy sheet pan meal featuring crispy Italian sausages, roasted bell peppers, and golden potatoes. This comforting and flavorful dinner comes together in about 30 minutes with minimal cleanup.

  • 4 Italian sausages (about 1 pound / 450 g) – sweet or spicy
  • 3 medium bell peppers (about 450 g), sliced (red, yellow, and green)
  • 1 pound (450 g) baby Yukon gold or red potatoes, quartered
  • 3 tablespoons (45 ml) olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Quarter the potatoes and place them in a mixing bowl. Add 1 tablespoon olive oil, ½ teaspoon smoked paprika, ½ teaspoon dried oregano, and a pinch of salt and pepper. Toss to coat evenly.
  3. Spread the potatoes in a single layer on a large rimmed baking sheet. Roast for 10 minutes.
  4. While the potatoes roast, slice the bell peppers into ½-inch strips. In a bowl, toss the peppers with 2 tablespoons olive oil, ½ teaspoon smoked paprika, ½ teaspoon dried oregano, minced garlic, and salt and pepper to taste.
  5. After the potatoes have roasted for 10 minutes, remove the pan from the oven. Nestle the sausages among the potatoes and scatter the seasoned peppers evenly on the sheet pan.
  6. Roast everything for an additional 20 minutes, turning the sausages, potatoes, and peppers halfway through cooking.
  7. Check that sausages reach an internal temperature of 160°F (71°C), potatoes are fork-tender, and peppers are soft with slightly charred edges. Roast for 5 more minutes if needed.
  8. Sprinkle chopped fresh parsley over the top. Let rest for 5 minutes before serving.

Notes

Pre-roasting the potatoes for 10 minutes before adding the sausage and peppers ensures crispiness without overcooking the sausage. Avoid overcrowding the pan to prevent steaming and soggy vegetables. Let the dish rest for 5 minutes after roasting to keep sausages juicy. Use sausages with natural casings for best texture. For a smoky flavor, use smoked paprika; swap with sweet paprika to skip the smoky note. Adding a splash of balsamic vinegar or glaze before serving adds a nice sweet-tangy contrast.
