  • 46 slices thick-cut bacon, cooked until crispy
  • 1 ripe avocado, peeled and pitted
  • 1 teaspoon fresh lime juice
  • 2 tablespoons mayonnaise
  • 2 slices ripe tomato, about 1/4 inch thick
  • 23 leaves crisp iceberg or romaine lettuce
  • Salt and freshly cracked black pepper to taste
  • Optional: Thin slices of turkey or chicken breast
  • Optional: Chipotle aioli or smoked paprika for variation
  • Optional: Gluten-free bread or large lettuce leaves for wraps

Instructions

  1. Cook the bacon: Place 4-6 slices of thick-cut bacon in a cold skillet. Turn heat to medium and cook slowly, flipping occasionally, until bacon is evenly crispy, about 8-10 minutes. Remove bacon and drain on paper towels.
  2. Toast the bread: Using bacon fat left in skillet, place bread slices in pan and toast each side until golden and crispy, about 2-3 minutes per side. Alternatively, use a toaster. Set aside.
  3. Prepare avocado spread: In a small bowl, mash the ripe avocado with 1 teaspoon fresh lime juice and a pinch of salt and pepper.
  4. Assemble sandwich layer one: Spread about 1 tablespoon mayonnaise on one slice of toasted bread. Add a generous layer of mashed avocado on top.
  5. Add bacon and lettuce: Place 2-3 slices of crispy bacon evenly over avocado. Follow with 1-2 leaves of crisp lettuce.
  6. Add tomato and second bread layer: Place tomato slices on top of lettuce, sprinkle lightly with salt and pepper, then cover with second slice of toasted bread.
  7. Optional protein layer: If using turkey or chicken slices, add them over the second bread slice with a bit more mayonnaise spread.
  8. Top it off: Place the third slice of toasted bread on top. Secure sandwich with wooden picks and cut diagonally into quarters.
  9. Serve immediately for best crispiness or wrap and refrigerate up to 24 hours. Toast bread again before serving if needed.

Cook bacon slowly over medium heat for perfect crispiness. Toast bread in bacon fat for extra flavor but watch closely to avoid burning. Mash avocado lightly to keep some texture.
