A hearty and comforting slow cooker stew packed with ground beef, potatoes, smoky sausage, beans, and flavorful spices. Perfect for busy weeknights or lazy weekends.

  • 1 lb ground beef
  • 12 oz smoked sausage, sliced into rounds
  • 4 medium potatoes, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) pinto or kidney beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 4 cups beef broth (low-sodium recommended)
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium heat until cooked through. Drain excess grease and transfer to the crockpot.
  2. In the same skillet, lightly brown the sausage slices and add them to the crockpot.
  3. Layer the diced potatoes, onions, garlic, and any optional vegetables into the crockpot.
  4. Add the canned tomatoes, beans, corn, beef broth, and tomato paste to the crockpot. Stir to combine.
  5. Sprinkle in the chili powder, smoked paprika, cumin, salt, and pepper. Mix well to distribute the spices.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  7. Taste the stew and adjust the seasonings as needed. Add more salt, pepper, or spices to your liking.
  8. Serve warm in bowls with crusty bread or cornbread on the side.
