  • 1.5 pounds baby potatoes, halved (Yukon Gold or red potatoes)
  • 1/2 cup unsalted butter, melted
  • 6 cloves fresh garlic, minced
  • 1/3 cup beef broth
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)

Instructions

  1. Cut the beef into 1-inch cubes and halve the baby potatoes. Mince the garlic and chop the herbs.
  2. In a small mixing bowl, combine melted butter, minced garlic, beef broth, lemon juice, parsley, thyme, salt, black pepper, and optional red pepper flakes. Whisk until blended.
  3. Add the cubed beef and potatoes to the crockpot. Toss gently to distribute evenly.
  4. Pour the garlic butter sauce over the beef and potatoes. Stir gently to coat everything.
  5. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until beef is fork-tender and potatoes are soft.
  6. Taste and adjust seasoning if needed. Sprinkle with extra parsley before serving. Serve hot with a spoonful of the buttery sauce drizzled over.

Notes

For extra flavor, sear the beef cubes before adding to the crockpot. Add extra veggies like carrots or green beans for more nutrition. If the sauce is too thin, remove the lid for the last 30 minutes or stir in a cornstarch slurry.
