  • 2 pounds boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (optional, for browning)
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred, patted dry)
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil, for serving (optional)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and black pepper.
  2. Optional: Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden. (No need to cook through.)
  3. Place chicken breasts in the bottom of the slow cooker. Sprinkle minced garlic and chopped sun-dried tomatoes over the top.
  4. In a bowl, whisk together chicken broth, heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes (if using). Pour the mixture over the chicken in the slow cooker.
  5. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken is tender and easily shredded with a fork.
  6. Remove chicken breasts and set aside. Stir the sauce in the slow cooker. If too thin, cook uncovered on HIGH for 10-15 minutes to thicken. For a smooth sauce, use an immersion blender to puree the sun-dried tomatoes into the sauce (optional).
  7. Return chicken to the sauce, spooning sauce over the top. Taste and adjust seasoning as needed.
  8. Garnish with fresh basil before serving.

Notes

For extra flavor, brown the chicken before slow cooking. If the sauce is too thin, cook uncovered on HIGH for 10-15 minutes or stir in a cornstarch slurry. For a dairy-free version, use coconut cream and nutritional yeast. This recipe is naturally gluten-free—just check your broth and parmesan. Leftovers keep well and the sauce is great over pasta or veggies.
