Decadent Champagne Brie Fondue

A silky, slightly tangy, and luxuriously smooth champagne brie fondue that’s perfect for parties and cozy gatherings, combining creamy brie cheese with crisp champagne for an indulgent dip.

  • 12 oz (340 g) Brie cheese, rind removed and cut into 1-inch cubes
  • 1 cup (240 ml) dry or brut champagne (or prosecco/sparkling wine as a substitute)
  • 1 clove garlic, minced
  • 1 tbsp (15 ml) lemon juice
  • 1 tsp fresh thyme, finely chopped (or dried thyme sparingly)
  • Black pepper, freshly cracked, to taste
  • Pinch of nutmeg (optional)
  • 1 tsp cornstarch
  • Baguette or artisan bread, cut into bite-sized pieces for dipping
  • Vegetables or fruit for dipping (optional): apple slices, baby carrots, blanched broccoli

Instructions

  1. Remove the rind from the brie and cut the cheese into small 1-inch cubes.
  2. Toss the brie cubes with cornstarch in a medium bowl to coat evenly.
  3. Pour champagne into a heavy-bottomed saucepan and warm over medium heat until hot but not boiling (about 3-4 minutes).
  4. Stir in minced garlic and lemon juice; simmer for 1 minute to meld flavors.
  5. Reduce heat to low and add the coated brie cubes in batches, stirring continuously until smooth and creamy (about 8-10 minutes).
  6. Stir in chopped fresh thyme, a pinch of nutmeg, and freshly cracked black pepper to taste; adjust seasoning if needed.
  7. Transfer the fondue to a warmed fondue pot or heatproof serving dish and serve immediately with bread and dippers.

Notes

Stir gently and keep heat low to prevent cheese from breaking or becoming grainy. If fondue thickens too much, add a splash of champagne and warm slowly while stirring. If too thin, add a small amount of cornstarch mixed with water to thicken. Fondue can be kept warm in a fondue pot, slow cooker on low, or a heatproof bowl over a tealight candle. Refrigerate leftovers up to 3 days and reheat gently with added liquid if needed.
