  • 1 cup (about 150 g) fresh strawberries, washed and hulled
  • ½ cup (90 g) semi-sweet chocolate chips
  • 2 tablespoons (30 g) dark chocolate chips
  • 1 tablespoon (15 ml) honey or maple syrup (optional)
  • ½ teaspoon (2.5 ml) vanilla extract
  • 2 tablespoons chopped nuts or granola (optional)
  • Pinch of sea salt

Instructions

  1. Wash and hull 1 cup (150 g) of fresh strawberries. Pat dry with a paper towel and set aside.
  2. In a microwave-safe bowl, combine ½ cup semi-sweet and 2 tablespoons dark chocolate chips. Microwave on medium power for 30 seconds, stir, then continue heating in 15-second bursts, stirring each time until smooth (about 1-1½ minutes total).
  3. Dip each strawberry halfway into the melted chocolate and place on parchment paper to set in the fridge for 10 minutes, or drizzle chocolate over whole strawberries with a spoon for a rustic look.
  4. In a mixing bowl, combine 1 cup small-curd cottage cheese with 1 tablespoon honey or maple syrup and ½ teaspoon vanilla extract. Stir gently until smooth and creamy.
  5. Spoon the sweetened cottage cheese into a serving bowl. Arrange the chocolate-covered strawberries on top, sprinkle with a pinch of sea salt and optional chopped nuts or granola.
  6. Serve immediately or refrigerate for up to 4 hours before serving. If chilled, bring to room temperature for 10 minutes before eating.

Heat chocolate slowly in short bursts to avoid burning. Pat strawberries dry to ensure chocolate sticks well. Use small-curd cottage cheese for creaminess.
