  • 2 tablespoons (30 ml) heavy cream (optional)
  • 6 ounces (170 grams) dark or semi-sweet chocolate, chopped
  • 1 teaspoon coconut oil or butter (optional)

Instructions

  1. Gently wash and dry the strawberries thoroughly. Set aside on a paper towel.
  2. In a medium bowl, beat 8 ounces (226 grams) of softened cream cheese until smooth and creamy (about 2-3 minutes). Add 1/3 cup (40 grams) powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoons (30 ml) heavy cream. Mix until fluffy and well combined.
  3. Using a small spoon or piping bag, carefully hollow out the stem end of each strawberry just enough to hold the cheesecake filling. Fill each cavity generously with the cheesecake mixture.
  4. Place the filled strawberries on a parchment-lined tray and refrigerate for at least 30 minutes to firm up the filling.
  5. Chop 6 ounces (170 grams) of dark or semi-sweet chocolate. Melt it gently in a double boiler or microwave in 20-second intervals, stirring in between. Stir in 1 teaspoon coconut oil or butter for a glossy finish.
  6. Using toothpicks or forks, carefully dip each filled strawberry halfway or fully into the melted chocolate. Let excess chocolate drip off before placing them back on parchment paper.
  7. Return the dipped strawberries to the fridge for 15-20 minutes or until the chocolate hardens with a satisfying snap.
  8. Arrange the bites on a plate or tray and serve immediately or keep chilled until serving.

Notes

Ensure strawberries are completely dry before filling and dipping to prevent chocolate from seizing. Melt chocolate slowly and stir frequently for smooth coating. Chill filled strawberries well before dipping to avoid filling leakage. If chocolate thickens, gently reheat in short bursts.
