Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place your pie crust into the 9-inch dish, gently pressing it into the edges. Crimp the edges if desired. Set aside.
  3. Toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and slightly browned. Remove from heat and let cool.
  4. Melt 1/2 cup (113 grams) unsalted butter in a small saucepan or microwave-safe bowl. Let it cool slightly.
  5. In a large bowl, whisk together 1 cup (200 grams) granulated sugar, 2 large eggs, 2 tablespoons (30 ml) bourbon, 1 teaspoon (5 ml) vanilla extract, 1/4 teaspoon salt, and the melted butter until smooth and well combined.
  6. Gently fold in the toasted pecans and 1 cup (170 grams) chocolate chips, distributing evenly throughout the filling.
  7. Pour the filling into the prepared pie crust, smoothing the top with a spatula.
  8. Bake on the middle rack for 50-60 minutes until edges are puffed and golden and the center is set but slightly jiggly.
  9. Cool completely on a wire rack for at least 2 hours before slicing.
