Decadent Lobster Tail with Garlic Herb Butter

A quick and easy recipe featuring tender lobster tails broiled with a rich garlic herb butter, perfect for special occasions or a luxurious weeknight dinner.

  • 4 lobster tails, about 68 ounces each, thawed if frozen
  • 6 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon paprika (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your broiler to high and position the oven rack about 6 inches from the heat source (about 5 minutes).
  2. Using kitchen shears, cut down the top center of each lobster shell, stopping just before the tail fin. Pry the shell open gently and lift the lobster meat out, resting it on top of the shell.
  3. In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme, lemon juice, salt, pepper, and paprika. Mix until well blended.
  4. Lightly brush the lobster shells with olive oil to prevent sticking. Then generously brush the garlic herb butter over the exposed lobster meat, reserving a tablespoon or two for basting.
  5. Place the lobster tails on a rimmed baking sheet and broil for 8-10 minutes until the meat is opaque and firm. Halfway through cooking, baste with the reserved butter.
  6. Check for doneness: lobster meat should be white and firm, not translucent or rubbery. Internal temperature should be around 140°F (60°C).
  7. Serve immediately, spooning any extra garlic herb butter over the lobster tails and garnish with fresh parsley or lemon wedges.

Notes

Do not overcook the lobster to avoid rubbery texture. Use softened butter to blend herbs smoothly. Rotate baking sheet halfway if broiler heats unevenly. Let lobster rest for 1-2 minutes after broiling to keep juices.
