Decadent Mississippi Mud Pie

A rich, gooey chocolate lover’s dream pie with layers of crunchy crust, creamy chocolate pudding, and fluffy whipped cream topped with toasted nuts. Perfect for any occasion and surprisingly easy to make.

  • 1 ½ cups chocolate cookie crumbs (Oreos or chocolate graham crackers, finely crushed)
  • 6 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 package (3.9 oz) instant chocolate pudding mix
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup semisweet chocolate chips, melted
  • 1 teaspoon espresso powder (optional)
  • ½ cup chopped toasted pecans or walnuts

Instructions

  1. Prepare the crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Mix until evenly coated and holds together when pressed, about 3 minutes.
  2. Press the crust: Transfer mixture into a 9-inch pie dish. Press firmly and evenly into bottom and sides. Chill in refrigerator for 15 minutes.
  3. Make the pudding filling: Whisk instant chocolate pudding mix and cold milk in a large bowl for about 2 minutes until thickened. Add espresso powder if using and whisk again.
  4. Fold in melted chocolate: Melt semisweet chocolate chips in microwave-safe bowl in 20-second bursts, stirring between. Cool slightly, then fold into pudding mixture gently, about 5 minutes.
  5. Assemble the pie: Pour pudding filling over chilled crust and smooth top. Refrigerate for 20 minutes while preparing whipped cream.
  6. Make the whipped cream: Beat heavy cream, powdered sugar, and vanilla extract in a chilled bowl with electric mixer on medium-high speed until stiff peaks form, about 3-4 minutes.
  7. Top the pie: Spread whipped cream evenly over pudding layer. Sprinkle toasted nuts on top.
  8. Chill before serving: Refrigerate entire pie for at least 2 hours to set and meld flavors.

Notes

Use cold milk and cream for best pudding and whipped cream results. Press crust firmly to prevent crumbling. Chill crust before adding filling to avoid sogginess. Avoid overwhipping cream to prevent butter formation. Espresso powder enhances chocolate flavor subtly. Pie can be frozen for up to 1 month; thaw overnight in fridge before serving.
