Decadent Peanut Butter Cup Brownies

Fudgy, gooey brownies layered with chopped peanut butter cups for a rich and indulgent treat that’s quick and easy to make.

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 tsp salt
  • About 12 regular-sized peanut butter cups, chopped into halves or quarters
  • Sea salt flakes (optional, for sprinkling on top)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and slightly glossy, about 2-3 minutes.
  3. Add the eggs and vanilla extract to the sugar mixture and whisk until fully combined and lighter in color, about 1-2 minutes.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients using a rubber spatula, mixing gently until uniform but not overmixed. The batter should be thick and fudgy.
  6. Chop the peanut butter cups into halves or quarters.
  7. Pour half of the brownie batter into the prepared pan and spread evenly. Scatter half of the chopped peanut butter cups over the batter.
  8. Dollop the remaining batter over the peanut butter cups and gently spread it out. Sprinkle the remaining peanut butter cups on top.
  9. Optionally, sprinkle sea salt flakes on top to enhance flavor.
  10. Bake for 25-30 minutes. Insert a toothpick in the center at 25 minutes; if it comes out with moist crumbs (not wet batter), the brownies are done.
  11. Cool completely (about 1 hour) before slicing to allow brownies to set and make slicing cleaner.

Notes

Do not overmix the batter to keep brownies fudgy. Let brownies cool completely before slicing for cleaner cuts. Use an oven thermometer to avoid overheating. For extra fudgy brownies, remove from oven when toothpick has moist crumbs. Variations include nut-free, vegan, and adding nuts for crunch.
