  • 1 can (14 oz/396g) sweetened condensed milk
  • 1 cup (240ml) whole milk
  • 2 cups (480ml) heavy cream, chilled
  • ¼ cup (30g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch (23×33 cm) baking pan and set aside.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Separate 5 large eggs, keeping whites and yolks in separate bowls.
  4. Beat egg yolks with ½ cup (100g) sugar until pale and fluffy, about 3 minutes. Add ⅓ cup (80ml) milk and 1 teaspoon vanilla extract; mix until combined.
  5. Gradually fold dry ingredients into yolk mixture until smooth, avoiding overmixing.
  6. Beat egg whites until soft peaks form. Slowly add remaining ½ cup (100g) sugar and continue beating until stiff, glossy peaks form.
  7. Carefully fold egg whites into batter in thirds, preserving airiness.
  8. Pour batter evenly into prepared pan. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Let cake cool for 10 minutes. Poke holes all over the surface with a fork or skewer.
  10. Whisk together evaporated milk, sweetened condensed milk, and whole milk until smooth.
  11. Slowly pour milk mixture evenly over warm cake. Use a spatula to spread and encourage absorption. Let soak at least 30 minutes or refrigerate overnight.
  12. Beat chilled heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  13. Spread whipped cream evenly over soaked cake. Garnish as desired and serve chilled.
