  • 1/2 cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the pan to create an even layer. Bake for 10 minutes, then let cool.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add sour cream, eggs, melted chocolate, and vanilla extract, and mix until fully incorporated. Pour the cheesecake mixture over the cooled crust and spread evenly.
  4. Bake at 325°F (163°C) for 35-40 minutes, or until the center is just set. The edges will look firm while the center may have a slight jiggle. Remove from the oven and let cool to room temperature.
  5. Heat heavy cream in a saucepan until just simmering. Remove from heat and add chopped dark chocolate and butter, stirring until smooth. Let cool slightly.
  6. Pour the fudge topping over the cooled cheesecake layer and spread evenly. Refrigerate for at least 4 hours, or until fully set.
  7. Lift the bars out of the pan using the parchment paper. Cut into squares and serve chilled.
