A luxurious yet healthy chia pudding infused with classic cocktail flavors, perfect for a romantic treat or festive dessert. Combines creamy texture with fresh fruits and crunchy toppings for a unique and indulgent experience.

  • 1/4 cup (about 40 grams) chia seeds
  • 1 cup (240 ml) milk of choice (almond, oat, dairy, etc.)
  • 1/2 cup (120 g) Greek yogurt, plain or vanilla (optional)
  • 12 tbsp honey, maple syrup, or agave (adjust to taste)
  • 1/2 cup fresh strawberries, sliced (fresh or frozen thawed)
  • 1/4 cup fresh raspberries or pomegranate seeds
  • 23 tbsp cocktail mixer (strawberry daiquiri mix, pink gin, cranberry vodka, or cocktail syrup)
  • 1 tsp vanilla extract
  • 1 tsp lemon or lime zest
  • 2 tbsp chopped nuts or granola (almonds, pistachios, or favorite granola)
  • Edible flowers or mint leaves for garnish

Instructions

  1. In a medium bowl, combine 1/4 cup chia seeds with 1 cup milk of choice. Whisk vigorously for 1-2 minutes to distribute seeds evenly and avoid clumps.
  2. Stir in 1/2 cup Greek yogurt, 1-2 tablespoons honey or maple syrup, 1 teaspoon vanilla extract, and lemon or lime zest. Blend well until smooth.
  3. Gently fold in 2-3 tablespoons of chosen cocktail mixer. Taste and adjust sweetness or mixer quantity as needed.
  4. Cover the bowl with plastic wrap or lid and refrigerate for at least 4 hours or overnight. Stir once or twice during the first hour to prevent clumping.
  5. While pudding chills, prepare toppings: slice strawberries, prepare raspberries or pomegranate seeds, chop nuts or measure granola, and rinse edible flowers or mint leaves.
  6. Once set, spoon pudding into serving glasses or bowls. Top generously with fresh fruits, nuts or granola, and garnish with edible flowers or mint leaves.
  7. Serve immediately chilled. For prepping ahead, keep toppings separate until serving to maintain crunch.

Notes

If pudding is too thick after chilling, stir in a splash of milk to loosen. If too thin, add a teaspoon of chia seeds and refrigerate another 30 minutes. Use full-fat Greek yogurt for creamier texture. For dairy-free, use plant-based yogurt. Adjust cocktail mixer quantity to avoid overpowering alcohol taste. Keep toppings separate until serving to maintain crunch.
