  • Pinch of salt
  • About 4 homemade Valentine cookies, crumbled (sugar or shortbread cookies)
  • ½ cup fresh strawberries, sliced (about 75g)
  • 2 tablespoons dark chocolate chips or chunks (70% cacao or higher, 30g)
  • 1 teaspoon chia seeds (optional)
  • ½ teaspoon cinnamon (optional)

Instructions

  1. In a medium saucepan, combine 1 cup (90g) old-fashioned rolled oats with 1 ¾ cups (415ml) milk of choice. Add a pinch of salt, 1 teaspoon vanilla extract, and 2 tablespoons brown sugar. Stir to combine.
  2. Bring the mixture to a gentle boil over medium heat, then reduce to low and simmer. Stir occasionally to prevent sticking, cooking for about 8-10 minutes until thick and creamy. Add more milk if too thick.
  3. If desired, stir in ½ teaspoon cinnamon and 1 teaspoon chia seeds halfway through cooking.
  4. While oatmeal cooks, crumble about 4 Valentine cookies into bite-sized pieces.
  5. Spoon the cooked oatmeal into serving bowls. Sprinkle cookie crumbles evenly over the top.
  6. Layer sliced fresh strawberries (½ cup or 75g) over the cookie crumbles.
  7. Scatter 2 tablespoons (30g) dark chocolate chips or chunks over the strawberries. The warmth will slightly melt the chocolate.
  8. Optional: Drizzle honey or maple syrup and garnish with fresh mint leaves before serving.

Notes

Use old-fashioned rolled oats for best texture; avoid instant or steel-cut oats. Add cookie crumbles just before serving to keep crunch. Use dark chocolate with 70% cacao or higher for balanced sweetness. For gluten-free, use certified gluten-free oats and cookies or omit cookies. For vegan, use plant-based milk, maple syrup instead of brown sugar, and vegan cookies.
