  • 2 tablespoons (30g) dark chocolate chips or chopped dark chocolate (70% cacao or higher)
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • 1 teaspoon chia seeds or flaxseeds (optional)
  • 2 tablespoons Greek yogurt or plant-based yogurt (optional)

Instructions

  1. In a small saucepan, combine ½ cup rolled oats with 1 cup milk or preferred milk alternative and a pinch of sea salt. Bring to a gentle boil over medium heat, then reduce to low and simmer, stirring frequently for about 5-7 minutes until oats are soft and creamy but not mushy.
  2. Stir in 1 tablespoon honey or maple syrup and ½ teaspoon vanilla extract. If using chia or flaxseeds, add them now. Cook for another minute to meld flavors. Fold in 2 tablespoons Greek or plant-based yogurt off the heat if desired.
  3. Rinse and slice ½ cup fresh strawberries and set aside.
  4. Melt 2 tablespoons dark chocolate chips or chopped chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth, or melt in a double boiler over simmering water, being careful not to overheat.
  5. Pour warm oatmeal into a serving bowl. Arrange sliced strawberries on top in a pretty pattern. Drizzle melted chocolate generously over the strawberries and oats.
  6. Optionally, sprinkle extra seeds or a tiny pinch of sea salt on top. Serve immediately for best texture and flavor.

Notes

If oats thicken too much, add a splash of milk to loosen. Stir frequently to avoid sticking or burning. Melt chocolate gently to prevent seizing. Slice strawberries just before serving to keep fresh and avoid sogginess. Use certified gluten-free oats for gluten-free diet. For vegan version, use plant-based milk, maple syrup, and dairy-free yogurt.
