A quick, healthy, and indulgent Greek yogurt bowl featuring fresh strawberries, honey, and toasted almonds, perfect for Valentine’s Day or any time you want a light but satisfying treat.

Ingredients

Scale
  • 1 cup (240 ml) Greek yogurt (full-fat preferred, low-fat works too)
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 12 tablespoons (1530 ml) honey (floral honey like clover or wildflower recommended)
  • 2 tablespoons (15 g) toasted almonds, chopped (can substitute walnuts or pecans)
  • 1 teaspoon (5 g) chia seeds (optional)
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • Fresh mint leaves (a few, for garnish)

Instructions

  1. Toast the almonds: Heat a dry skillet over medium heat. Add the chopped almonds and toast for 3-4 minutes, stirring frequently until golden and fragrant. Remove from heat and let cool.
  2. Prepare the strawberries: Rinse under cold water, hull, and slice into thin pieces. If using frozen berries, thaw completely and pat dry.
  3. Mix the yogurt base: In a mixing bowl, combine Greek yogurt with vanilla extract. Stir gently until evenly mixed.
  4. Add honey: Drizzle 1 to 2 tablespoons of honey over the yogurt. Mix lightly to combine without breaking the creamy texture.
  5. Assemble the bowl: Spoon the yogurt mixture into a serving bowl. Arrange sliced strawberries on top evenly. Sprinkle toasted almonds and chia seeds (if using) over the strawberries.
  6. Garnish and serve: Add fresh mint leaves for color and aroma. Serve immediately for best texture and flavor.

Notes

Use ripe strawberries for best flavor. Toast nuts carefully to avoid burning. Add honey gradually to control sweetness. Keep toppings separate if prepping ahead to maintain texture. For dairy-free, use thick coconut or almond-based yogurt and substitute honey with agave syrup.
