Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup (120g) dried cranberries, chopped roughly
  • 1 cup (170g) white chocolate chips
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (55g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 tsp orange zest, freshly grated
  • ½ tsp vanilla extract
  • For garnish: a handful chopped dried cranberries and a sprinkle of white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper, leaving a bit of overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until smooth and glossy.
  5. Gradually fold the flour mixture into the wet ingredients until just combined, avoiding overmixing.
  6. Fold in the chopped dried cranberries and white chocolate chips evenly.
  7. Pour the batter into the prepared pan and spread evenly with a spatula. Tap the pan lightly to release air bubbles.
  8. Bake for 28-32 minutes until a toothpick inserted in the center comes out with a few moist crumbs and the top is lightly golden.
  9. Cool the bars completely in the pan on a cooling rack for at least 30 minutes.
  10. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  11. Gradually add the powdered sugar, then stir in the orange zest and vanilla extract. Beat until light and fluffy.
  12. Spread the cream cheese frosting evenly over the cooled bars.
  13. Garnish with chopped dried cranberries and white chocolate chips.
  14. Refrigerate the frosted bars for at least 1 hour to set the frosting before slicing into about 12 squares. Use a sharp knife wiped clean between cuts for neat edges.

Notes

Use parchment paper to line the pan for easier cleanup and removal. Avoid overmixing the batter to keep bars tender. Soften cream cheese and butter completely before making frosting to avoid lumps. Chill frosted bars for at least 1 hour before slicing for clean edges. If frosting is too soft, chill briefly. Tent bars with foil if browning too fast.
