  • 1 packet (about 2 tablespoons) taco seasoning
  • 1 medium diced onion (about 1 cup / 150g)
  • 1 cup (150g) frozen corn
  • 1 cup (100g) shredded cheddar cheese

Instructions

  1. Heat the skillet over medium-high heat for about 2 minutes until hot but not scorching.
  2. Add ground beef and diced onion to the skillet. Break the beef apart and cook for 6-8 minutes until beef is browned and onions are softened.
  3. Drain excess fat from the skillet if necessary.
  4. Sprinkle taco seasoning evenly over the beef mixture. Add 1/4 cup (60ml) water and stir to coat. Let simmer for 3-4 minutes.
  5. Stir in frozen corn and cook for another 2-3 minutes until heated through.
  6. Sprinkle shredded cheddar cheese evenly over the mixture. Cover the skillet with a lid or foil and let sit off heat for 2 minutes to melt the cheese.
  7. Serve hot with optional toppings like sour cream, avocado, fresh cilantro, salsa, and warm tortillas or tortilla chips.

Notes

If skillet seems dry while simmering, add a splash more water or broth. Do not rush cheese melting step for best gooey texture. Drain excess fat carefully to avoid greasiness but keep some for juiciness. Ground turkey or chicken can be used as leaner alternatives. For dairy-free, use plant-based cheese or omit cheese.
