Instructions

  1. Prep the tortilla: Spread about ½ teaspoon of softened butter or oil thinly over one side of the tortilla.
  2. Fold the tortilla: Fold in half (buttered side inward), then into quarters to form a wedge shape. Trim if needed to fit the mug.
  3. Layer in the mug: Place the folded tortilla wedge into a microwave-safe mug with the pointy end down, open edges up, creating a pocket.
  4. Add the cheese: Sprinkle about ¼ cup of shredded cheese into the pocket.
  5. Add optional fillings: Add chicken, beans, corn, or salsa on top of the cheese (2-3 tablespoons max).
  6. Top with more cheese: Sprinkle the remaining ¼ cup of cheese over the fillings.
  7. Microwave: Cook on high for 1 minute. Check; if cheese is mostly melted and edges are browning, it’s done. If not, microwave in 15-second intervals until golden and crispy (total 1 to 1½ minutes).
  8. Let it rest: Carefully remove the mug and let sit for 30 seconds.
  9. Remove and serve: Gently lift the quesadilla out with a fork or spatula. Place on a plate, cut into wedges if desired, and serve immediately with salsa, sour cream, or your favorite dipping sauce.

Notes

For extra crispy edges, flip the quesadilla over in the mug after the first minute and microwave for another 15-20 seconds. Use room temperature tortillas to prevent cracking. Don’t overfill the mug; keep fillings to about 3 tablespoons total. Let the quesadilla rest for 30 seconds before eating to avoid burning your mouth.
