Ingredients

Scale
  • 6 to 8 pre-made cinnamon rolls, cut into chunks
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1 cup (240 ml) heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50 grams) granulated sugar
  • A pinch of salt
  • 2 tablespoons melted butter
  • For the glaze: 1 cup powdered sugar mixed with 2-3 tablespoons milk

Instructions

  1. Cut 6 to 8 cinnamon rolls into roughly 1-inch chunks and spread evenly in a greased 9×13-inch casserole dish.
  2. In a large mixing bowl, whisk together 6 large eggs, 2 cups milk, 1 cup heavy cream, 1 tablespoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 cup granulated sugar, a pinch of salt, and 2 tablespoons melted butter until smooth.
  3. Slowly pour the custard mixture over the cinnamon roll pieces, pressing lightly to soak all chunks.
  4. Cover the casserole dish tightly with plastic wrap or a lid and refrigerate for at least 6 hours or overnight.
  5. Remove the casserole from the fridge and let sit at room temperature for 15 minutes while preheating the oven to 350°F (175°C).
  6. Bake uncovered for 45 to 50 minutes until golden brown and a knife inserted near the center comes out clean or with slight custard residue.
  7. While baking, mix 1 cup powdered sugar with 2 to 3 tablespoons milk until smooth to make the glaze.
  8. Drizzle the glaze over the warm casserole just before serving.

Notes

Use room temperature eggs and milk for smooth custard. Do not rush the soak; overnight soaking yields the best texture. Grease the dish well to prevent sticking. Tent with foil if the top browns too quickly. Let the casserole rest 5-10 minutes after baking for easier slicing. Optional toppings include chopped pecans or fresh fruit. Leftovers keep up to 3 days refrigerated and reheat well.
