  • 1 medium carrot, thinly sliced into matchsticks
  • 1 cup snap peas, trimmed
  • 1 small red bell pepper, sliced thin
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced (for garnish)

Instructions

  1. Pat the chicken pieces dry with paper towels to remove excess moisture. Season lightly with salt and pepper, then toss with cornstarch in a bowl until evenly coated. Set aside for 10 minutes.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, and minced garlic. Mix the cornstarch slurry separately and have it ready to thicken the sauce later.
  3. Heat vegetable oil over medium-high heat in a large non-stick skillet or wok. Add the chicken in a single layer and cook undisturbed for 3-4 minutes until golden and crispy. Flip and cook another 3 minutes until cooked through. Remove chicken to a plate lined with paper towels.
  4. Remove excess oil from the pan, leaving about 1 tablespoon. Add toasted sesame oil, then toss in carrots, snap peas, and bell pepper. Stir fry for 3-4 minutes until vegetables are tender-crisp and bright in color.
  5. Return the chicken to the pan with the vegetables. Stir the teriyaki sauce again, then pour it over the chicken and veggies. Immediately add the cornstarch slurry and stir constantly as the sauce thickens, about 1-2 minutes, until glossy.
  6. Sprinkle toasted sesame seeds and sliced green onions over the stir fry. Toss gently and remove from heat.
  7. Serve hot over steamed jasmine rice or noodles, or enjoy as-is for a low-carb option.
