  • 1/4 teaspoon black pepper
  • Juice of half a lime
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 medium onion, sliced into thin strips
  • 1 tablespoon olive oil (for veggies)
  • Salt and pepper to taste
  • 8 small flour or corn tortillas (warmed)
  • Fresh cilantro leaves (optional)
  • Sour cream or Greek yogurt (optional)
  • Avocado slices or guacamole (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, combine olive oil, smoked paprika, cumin, chili powder, minced garlic, salt, pepper, and lime juice. Stir well.
  3. Toss the shrimp in the marinade until evenly coated. Let sit for 10-15 minutes.
  4. Slice bell peppers and onion into thin strips. Toss with olive oil, salt, and pepper in a separate bowl.
  5. Arrange the veggies on one half of a sheet pan in a single layer.
  6. Place the marinated shrimp on the other half of the sheet pan, spreading them out evenly.
  7. Roast in the oven for 10-12 minutes, turning the shrimp halfway through, until shrimp are pink and opaque with crispy edges and veggies are tender but still slightly crunchy.
  8. Warm tortillas by wrapping them in foil and placing in the oven for the last 5 minutes or heating quickly in a skillet.
  9. Assemble fajitas by spooning shrimp and veggies onto tortillas. Garnish with cilantro, avocado slices, and sour cream or Greek yogurt if desired. Squeeze extra lime juice on top.
