  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a medium bowl, combine BBQ sauce, soy sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well to blend all flavors.
  2. Place chicken breasts or thighs in the crockpot in a single layer if possible. Pour the BBQ sauce mixture evenly over the chicken, coating each piece.
  3. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken is tender and easily shredded with a fork.
  4. While the chicken cooks, combine diced pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt in a medium bowl. Mix gently and refrigerate until ready to serve.
  5. Once cooked, shred the chicken directly in the crockpot using two forks and mix it with the sauce.
  6. Serve the shredded chicken topped generously with pineapple salsa. Enjoy over rice, in tacos, or wrapped in lettuce leaves.
