A simple, tasty, and visually appealing pinwheel sandwich platter perfect for graduation open houses and casual celebrations. Quick to prepare with fresh ingredients and customizable fillings.

Ingredients

Scale
  • Large flour tortillas (preferably Mission brand or any plain white or whole wheat) – about 6
  • 8 ounces softened cream cheese
  • 1/4 cup mayonnaise
  • 6 to 8 ounces thinly sliced deli meats (ham, turkey, or smoked chicken)
  • 4 ounces thinly sliced cheese (Swiss, cheddar, or provolone)
  • Thinly sliced cucumber
  • Thinly sliced bell peppers (red or yellow)
  • Shredded lettuce or baby spinach
  • 1 tablespoon finely chopped fresh dill or parsley
  • Salt and black pepper to taste
  • 1/4 teaspoon garlic powder
  • Optional: dash of hot sauce or smear of pesto

Instructions

  1. In a medium bowl, combine 8 ounces of softened cream cheese with 1/4 cup mayonnaise, 1 tablespoon chopped fresh dill or parsley, 1/4 teaspoon garlic powder, salt, and pepper to taste. Mix until smooth and creamy (about 5 minutes).
  2. Place the flour tortillas flat on a clean surface or cutting board. Spread an even layer of the cream cheese mixture over each tortilla about 1/8 inch thick, covering edge to edge (about 5 minutes).
  3. Arrange thin layers of deli meats and cheese slices evenly over the spread. Add a layer of sliced cucumbers, bell peppers, and a handful of shredded lettuce or baby spinach, keeping veggies thin for easy rolling (5–7 minutes).
  4. Starting from one edge, tightly roll each tortilla into a log shape. Wrap each log tightly in plastic wrap and refrigerate for at least 30 minutes to firm up the spread and hold shape.
  5. After chilling, unwrap the logs and slice them into 1-inch thick rounds using a sharp serrated knife. Arrange the pinwheels on a serving platter with colorful swirls facing up (about 10 minutes).
  6. Garnish with chopped fresh herbs or add toothpicks for easy grabbing. Serve immediately or cover and refrigerate until serving.

Notes

Let cream cheese soften for 30 minutes before mixing. Roll tortillas tightly but gently to avoid filling spilling out. Chill rolled tortillas for at least 30 minutes before slicing for best shape and flavor melding. Use a serrated knife to slice cleanly. Slice veggies thinly to ease rolling. Assemble a day ahead if desired, but slice just before serving. Avoid freezing as texture changes. Substitute ingredients for dietary needs.
