These Easy Ham & Cheese Pocket Sandwiches are a quick, satisfying lunch or dinner made with crescent roll dough, deli ham, and cheddar cheese. Ready in under 25 minutes, they are perfect for busy days, lunchboxes, or road trips.

  • 1 can (8 oz) refrigerated crescent roll dough
  • 8 slices deli ham (about 6 oz)
  • 4 slices cheddar cheese (or about 1 cup shredded)
  • 1 tablespoon Dijon mustard (optional but recommended)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Unroll the crescent roll dough onto a clean cutting board. Press the perforations together to seal them, then cut the dough into 4 equal rectangles (about 4×6 inches each).
  3. Spread a thin layer of Dijon mustard on one half of each rectangle, leaving a small border around the edges.
  4. Place 2 slices of ham on the mustard side of each rectangle, then place 1 slice of cheese (or about 1/4 cup shredded cheese) on top of the ham.
  5. Fold the empty half of the dough over the filling to create a pocket. Press the edges firmly to seal, then use a fork to crimp the edges all around.
  6. Use a sharp knife to cut 2 or 3 small slits on top of each pocket to let steam escape.
  7. Brush the tops of each pocket with the beaten egg. Sprinkle with sesame seeds or everything bagel seasoning if using.
  8. Place the pockets on the prepared baking sheet, leaving about 2 inches between them. Bake for 12-15 minutes, or until the tops are golden brown and the cheese is bubbling.
  9. Let the pockets cool on the baking sheet for 2-3 minutes, then transfer to a cooling rack for another 2 minutes before serving.
  10. Serve warm, while the cheese is still stretchy and the crust is flaky.

Notes

Do not overfill the pockets to prevent bursting. Seal edges well with a fork. Cut small vents in the top to keep the pastry crispy. Let the pockets rest for 3-4 minutes before eating to avoid burning your mouth on the hot cheese.
