A simple and delicious overnight cinnamon roll French toast casserole that is soft, custardy, and perfect for busy mornings or relaxed weekends. Made with store-bought cinnamon rolls soaked in a vanilla-spiked custard and baked to a golden caramelized top.

Ingredients

Scale
  • 8 unbaked store-bought cinnamon rolls (e.g., Pillsbury)
  • 6 large eggs, room temperature
  • 2 cups whole milk (480 ml)
  • 1 cup heavy cream (240 ml)
  • ⅓ cup granulated sugar (65 g)
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted
  • Powdered sugar (for dusting or optional glaze)

Instructions

  1. Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Cut each cinnamon roll into quarters.
  3. Arrange the cinnamon roll pieces evenly in the prepared baking dish.
  4. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth.
  5. Slowly pour the custard mixture evenly over the cinnamon roll pieces, pressing down lightly to ensure all pieces soak up the custard.
  6. Cover the dish tightly with aluminum foil or plastic wrap and refrigerate for at least 6 hours or overnight.
  7. Preheat the oven to 350°F (175°C).
  8. Remove the cover and bake uncovered for 45-50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the casserole rest for 5 minutes before serving.
  10. Optionally dust with powdered sugar or drizzle with a glaze before serving.

Notes

Use room temperature eggs and dairy to avoid curdling. Do not skip the overnight soak for best texture. Cover loosely with foil if the top browns too quickly. Let rest after baking for easier slicing. Use a sharp or serrated knife to cut neat squares. For a crispier top, brush with melted butter before baking. Variations include adding fruit, nuts, or spice changes.
