Ingredients

Scale
  • Strawberries, hulled and halved (or whole if small)
  • Cantaloupe or mango, cut into 1-inch cubes
  • Pineapple chunks, fresh or canned (drained)
  • Green grapes, seedless (or kiwi slices, peeled and quartered)
  • Blueberries
  • Purple grapes, seedless (or blackberries)
  • Wooden skewers (8-inch length, soaked in water for 10 minutes if grilling)
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the fruit (5 minutes): Wash all fruit thoroughly under cold water. Pat dry with a clean kitchen towel. Hull the strawberries and halve them if they are large. Cut the cantaloupe or mango into 1-inch cubes. Peel and slice the kiwi if using. Keep the grapes whole.
  2. Make the yogurt dip (2 minutes): In a small mixing bowl, combine 1 cup plain Greek yogurt, 2 tablespoons honey, 1 teaspoon vanilla extract, and a pinch of salt. Whisk until smooth and creamy. Taste and adjust sweetness if needed. If too thick, add a teaspoon of milk or water. Cover and refrigerate until ready to serve.
  3. Assemble the kabobs (8 minutes): Lay out the fruit in separate bowls or piles by color. Take a wooden skewer and start threading the fruit in rainbow order: red (strawberry), orange (cantaloupe), yellow (pineapple), green (grape), blue (blueberry), purple (grape). Leave a small gap between each piece. Repeat until all skewers are filled (about 8 to 10 kabobs).
  4. Arrange and serve (2 minutes): Place the assembled kabobs on a serving platter. Put the yogurt dip in a small bowl in the center or serve it on the side. For a fun presentation, fan the kabobs out like a rainbow. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For best results, use firm, ripe fruit. Soak skewers if grilling. Assemble kabobs no more than 2 hours before serving to prevent fruit from weeping. The yogurt dip can be made up to 2 days in advance and tastes better after chilling.
