A quick and easy freezer jam recipe using just ripe peaches, sugar, and warming spices for a cozy, spreadable preserve perfect for breakfasts and gifts.

Ingredients

Scale
  • 4 cups peeled, pitted, and finely chopped fresh peaches (about 67 medium peaches)
  • 2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Optional: pinch of ground cloves or nutmeg
  • Optional: splash of lemon juice

Instructions

  1. Wash peaches thoroughly. Peel by blanching in boiling water for 30 seconds, then plunge into ice water to loosen skins. Pit and finely chop peaches to yield about 4 cups.
  2. In a large mixing bowl, combine chopped peaches with 2 cups granulated sugar. Stir gently to coat all pieces. Let sit for 10 minutes to draw out juices.
  3. Add 1 teaspoon ground cinnamon and 1/4 teaspoon ground ginger to the peach-sugar mixture. Stir well to evenly distribute spices.
  4. Optional: Warm the mixture gently in a saucepan over low heat for 3-5 minutes, stirring occasionally to dissolve sugar and bloom spices. Do not boil.
  5. Spoon jam into sterilized freezer-safe containers or jars, leaving about 1/2 inch headspace. Wipe rims clean and seal tightly.
  6. Store jam in the refrigerator for up to 3 weeks or freeze for up to 6 months. Thaw in fridge before use and stir well.
  7. Allow jam to chill for at least 24 hours before serving to let flavors meld and texture set.

Notes

If jam seems runnier than expected, stir well before serving. Leave 1/2 inch headspace in containers to allow for expansion in freezer. Use firm, ripe peaches for best texture. Peeling peaches by blanching makes it easier. Let jam chill for at least 24 hours for best flavor and texture. Sugar can be slightly reduced with a splash of lemon juice but may shorten fridge life.
