These crisp, creamy pinwheels feature soft flour tortillas rolled with tangy ranch cream cheese, thinly sliced cucumber, and everything bagel seasoning. Quick to make and perfect for parties, lunchboxes, or snacking straight from the fridge.

  • 4 large flour tortillas (10-inch diameter, soft and flexible)
  • 8 oz cream cheese, softened (full-fat recommended)
  • 3 tbsp ranch dressing or 1 tbsp ranch seasoning
  • 1 large English cucumber, thinly sliced (about 1/8 inch thick)
  • 23 tbsp everything bagel seasoning
  • Optional: sliced deli turkey or ham
  • Optional: fresh chives or dill
  • Optional: sliced radishes

Instructions

  1. Wash and dry the cucumber. Slice thinly (about 1/8 inch thick). Pat slices dry with a paper towel if watery.
  2. In a medium mixing bowl, blend softened cream cheese with ranch dressing or ranch seasoning until smooth. Add a splash of milk if needed to loosen.
  3. Lay out one tortilla on a cutting board. Spread about 1/4 of the ranch cream cheese mixture evenly, leaving a 1/2 inch border.
  4. Sprinkle optional herbs or sliced turkey/ham if using.
  5. Arrange cucumber slices in a single, slightly overlapping layer over the cream cheese.
  6. Generously sprinkle 1/2 to 3/4 tbsp everything bagel seasoning over the cucumbers.
  7. Roll the tortilla up tightly from one end. If the tortilla cracks, microwave for 10 seconds to soften. Wrap the roll tightly in plastic wrap or parchment paper.
  8. Chill the rolled tortilla for 10-15 minutes in the fridge (optional, but recommended for neat slicing).
  9. Using a serrated knife, slice into 1-inch rounds. Wipe knife between cuts for clean pinwheels.
  10. Repeat with remaining tortillas and filling.
  11. Arrange pinwheels on a platter, sprinkle with extra everything bagel seasoning if desired, and serve cold.

Notes

For best results, use room temperature cream cheese and slice cucumbers thinly. Don’t overfill tortillas to prevent bursting. Chill rolls before slicing for cleaner pinwheels. Gluten-free or vegan substitutions work well. Store in an airtight container in the fridge for up to 2 days; slice just before serving.
